Good morning, lovelies. Boy, I’ve missed blogging (and you)! Sometimes life just gets in the way. I have a lot on my plate at work these days combined with being so tired since the appendicitis. On top of that there has been a lot of behind the scenes work on the blog lately, so my energy has been going towards that. Before I started the blog I never realised how much work, that’s not writing new posts, that goes into keeping a blog. Phew. But I love it all – so no complaints. I just wish that that there was more time for it all.

Anyways just wanted to stop by and say hi. Today I have a date with the computer and a full camera – my head is literally spinning with ideas and new inspiration, I picked up – so I am really looking forward to getting it all down on paper.

I snapped these pics yesterday morning. It was grey and raining, so I staying in bed all morning drinking coffee and listening to Mads & Monopolet (a legendary Danish radio show). When I finally got up, I made gluten free blueberry pancakes with vanilla skyr and fresh raspberries and figs ad a big glass of freshly squeezed juice. I used to love pancakes for breakfast on weekends, but since I stopped eating gluten in January, I kinda forgot about them. Recently I have been experimenting with making gluten free ones, and I’ve finally come up with a recipe that works. Can’t tell they’re gluten free.

Figs are one of my all time favourite foods in the world, so I’m stuffing my face when there in season. Raspeberries are on that list too – and I tell you, together they are even better! Try it :)
The juice is squeezed from carrot, beet root, apple and ginger, yum! My best tip: always drink your juice with a straw. Your teeth and dentist will thank you for it.

Btw I’m working on a new picture wall as you can see in the background. It’s coming together – I’ll share more when the few last ices I’m waiting on are in place.

    Hi Rikke! Appendicitis, wow :( Hope you’re feeling better! I know exactly how much time a blog can take up, including sending countless e-mails, meeting with sponsors, layout and other things that your readers might not immediately notice ;) But I’m sure those readers will be loyal, even if you decide to post a little less :) Have a great weekend!       Thank you Flor! Yes, you know just what I’m talking about :) Appendicitis was brutal, but I got was with my appendix intact. I’m grateful I didn’t have to go through surgery. And I’m feeling good again – just tired. I have been running very fast lately to keep up with everything, so I am taking it as a reminder to slow down a bit. I love the blog and all I do here, but the countless emails, sponsor meetings and all the technical work takes up a lot of time too.
