I’ve asked a hand full of inspiring and talented people to each write a guest post for the blog to keep you entertained while I’m off on holiday in Southeast Asia. Eight up is Ditte Ingemann, a food & lifestyle photographer, cookbook author and food blogger extraordinaire.
Ditte is a dietitian, a genius in the kitchen and super-duper nice. I find lots of inspiration on her blog the Food Club and in her cookbooks – she’s just published a new one, that I must own too. She’s sharing one of her brand new recipes with us, yum! Welcome Ditte!
Energy bars with coconut
I’m so happy that Rikke has asked my to “babysit” her blog while she’s enjoying her vacation. I want to share a recipe from my new cook book “Low Carb fra The Food Club” and it’s one of my favorite recipes.
It’s easy, healthy and really tasty. You can use these energy bars as a snack, a small dessert or as a sweet treat for the pinic. I recommend making a large portion and keep them in the fridge.
Ingredients
makes 15-18 bars
150 g. unsalted cashew nuts
100 g. shredded coconut
2 tbsp chia seeds
50 g. hemp protein powder
15 soft dates, pitted
5 tbsp soft coconut oil
3-4 tbsp raw cacao powder
about 8-10 tbsp water
Topping
Freeze dried berries or sea buckthorn
Add all ingrediens in a blender or food processor and blend until everything is combined – if the mixture feels too dry, add more water.
Line a loaf pan (20*22 cm) with a piece of parchment paper and press the mixture into the pan with slightly wet fingers. Sprinkle a handful of freeze dried berries on top – chill for at least an hour or overnight. Cut into large or small bars, as desired. Wrap each bar in plastic wrap and store the bars in the fridge for several weeks or in the freezer.

Jeg har netop købt din bog Low Carb, og overvejede denne opskrift. Men jeg tænkte på, om du har et forslag til, hvad hampeprotein kan erstattes med? :-)
